The business was founded by Andy Coughlin, who spent 15 years in the restaurant industry, and his wife Anne Marie, a traditional herbalist and teacher. In addition to their food truck services, New Leaf offers frozen beet burger patties for retail sale at various local stores. These patties are made using beets sourced from Common Ground Farm in St. Thomas.
